does this look right? how to tell if your kombucha is brewing properly

Kombucha is weird

It looks weird, it smells weird.  And until you get used to become addicted to it, it tastes….weird.

About 3 days into my first brew I frantically emailed my friend Brian (who is one of the folks that first taught me about the benefits of raw milk, kombucha, fermenting veggies, etc.)

I tried to describe the oddity that had formed over the top of my tea, confused as to whether I had successfully grown a “scoby baby” or mold.

He assured me that everything was fine.  But I was having trouble believing him because the whole process was just so foreign to me.

As it turns out, he was right, everything was fine.

A few months later I did have a batch that molded, and I’m kicking myself for not taking pictures of it.  It was very obvious that something was wrong – there were little fuzzy green circles all over the scoby on the top of the brew.

I’m a visual learner (hence my photo-laden tutorials) so I thought that a few pictures showing a successful brewing process in action may be helpful to those of you who are new to making your own kombucha.

DAY 1

the scoby is floating about. it may sink, turn to the side, hang out half-way down, or float perfectly on top.  all are fine!
